In animals, collagen makes up the majority of the protein mass (approximately 30%) and is a key component of the extracellular matrix. Glycoproteins known as collagens are distinguished by having at least one triple-helix-structured domain. There are four main types (I, II, III, and IV) and at least 28 types of collagens. Type I forms about 90% of the collagen in the body, and it forms the large, eosinophilic collagen fibers. Type I is present in scar tissue, tendons, ligaments, muscle, the organic part of bone, the skin, the teeth, joints, and organ capsules. Extracted and purified collagen is employed in a wide range of industries due to its unique properties. It is used in medicine to treat wounds and is playing an ever-expanding role in tissue engineering and biomedical cell culture. There is growing use in the cosmetic industry, where it is used for skin rejuvenation and as feedstock for chemical formulations, and in the food industry, both as a functional food supplement and as a food additive.
