Quinolones are a class of broad-spectrum antibiotics that have been widely used to treat gastrointestinal and urinary infections. Regular eating of foods derived from animals with excessive quinolone residues can result in the long-term indirect absorption of quinolones by the body, which will be harmful to human health. As a result, many nations have defined the maximum residue limits (MRLs) of quinolones in food. Antibiotic residues bear a risk for the production process safety and consequently also an economic risk, as they inhibit biotechnological production processes involving microorganisms such as starter cultures in the dairy industry.

Antibiotic residues in foods of animal origin such as milk, eggs, or meat represent a potential health risk to the consumer.
